Matanza™ Cuban Hot Sauce

Matanza™ is our hottest sauce, a limited-edition Cuban hot sauce built on the same mojo criollo base as the rest of the line. Habanero plus Carolina Reaper. The name comes from the traditional Cuban whole-hog roast, the kind that brings a whole town together for two days. Limited production. When the bottles are gone, they're gone.

What's different about it

Matanza is the only Barbaro Mojo sauce that pushes into Extra Hot territory. The Reaper does most of the work. Small amount, big payoff. Same Cuban-spice character as El Havanero and BDE, just turned up.

Flavor profile: garlic-forward and citrus-forward, framing an extra-hot Carolina Reaper punch with the sour-orange mojo base.

Frequently Asked Questions

How spicy is Matanza?
Matanza is a limited-edition extreme heat made with Carolina Reapers and habaneros. The hottest sauce Barbaro Mojo has ever bottled. 10/10 on the heat scale, for experienced chili-heads only.
What's in Matanza?
Tomatoes, habanero peppers, sweet onion, distilled vinegar, red bell pepper, our mojo criollo base (citrus, garlic, and Cuban spices), garlic, salt, Carolina Reaper peppers, and spices, plus a small amount of xanthan gum to keep the sauce from separating on the shelf. No extracts and no fillers, the heat comes from real peppers.
Why is Matanza limited edition?
Matanza is small-batch and dependent on pepper harvests. Once a batch sells out it may not return for months. Each bottle is numbered.
Is Matanza gluten-free and vegan?
Yes. Matanza is gluten-free, vegan, and made with no high-fructose corn syrup. The mojo criollo base contains small amounts of food-safe preservatives (potassium sorbate and sodium benzoate) carried over from the citrus marinade. A small amount of xanthan gum keeps the sauce from separating on the shelf.
What does Matanza pair with?
Use Matanza as a finishing sauce on smoked meats, ramen, tacos, or chili. A drop or two is enough, it's intended to challenge, not coat.
How does Matanza compare to Best Day Ever?
Best Day Ever is hot; Matanza is extreme. Matanza leans harder on the Carolina Reaper and drops the fruit, pushing both heat and complexity to the limit of edible.
What is the Barbaro Mojo heat scale?
The Barbaro Mojo heat scale is the brand's own 1-10 flavor-and-heat score for the lineup. It is NOT Scoville. On this scale: Jalabáo sits at 3/10 (mild), Piñazo at 6/10 (medium-hot), Best Day Ever at 8/10 (medium-hot with fruit-forward heat), El Havanero at 9/10 (hot), and Matanza at 10/10 (extra hot, limited edition). For lab-tested capsaicin numbers (Scoville Heat Units), see each product page; those are a separate, factual figure.

This hot sauce is great. Matanza is very habanero-forward, but the creep of the reaper is so amazing without overpowering the habanero taste.
